Dungeness Crab and Shrimp Melt Sandwiches

Here is another great crab recipe. This one is made with Dungeness crab, which is a slightly cheaper alternative to blue crab or king crab. Dungeness crab has a slightly sweet taste and the meat in the crab is plentiful. This crab recipe is super easy to prepare and would make an excellent high protein lunch.

Dungeness crab and shrimp melt sandwiches

Ingredients:

2 English Muffins (or more depending on how many you want to make)

5 ounces crab meat

5 ounces bay shrimp (the tiny cooked ones)

pinch of pepper

1 teaspoon lemon juice

4 slices of mild cheddar cheese

2 tablespoons of her vinaigrette dressing (your choice)

4 slices of tomatoes

pinch of salt

1/2 cup of mayo

2 tablespoons minced onion

Dash of Old Bay Seasoning

Preparation Instructions:

Combine the mayo, lemon juice, pepper, salt, onion, celery, shrimp, and crab meat.  At the same time, toast the English Muffins (split them in half and then toast them). Take your crab and shrimp mixture and spoon a nice big spoonfull onto each English Muffin. Top with Old Bay Seasoning. For the tomato slices you will want to dip them in the vinaigrette dressing mixture and then place the tomatoe slices on top of the crab and shrimp mixture on the English Muffins and top with the slices of cheese. Broil the crab melts for about 2-3 minutes under the broiler until the cheese is melted.  Be careful to check them often because high heat on broilers can cause burning if they’re left in there too long.

An alternative to making these is to broil the crab mixture on the english muffins before adding the cheese. You can then add chese and place under the broilers for a few mintues until they are hot. This way you will ensure that your crab mixture is also hot. Just be careful not to burn them!
