Low Fat, High Protein Recipe - Alaska King Crab Pasta Salad

This salad is a favorite for many because of the low fat ingredients. If you are on a low carb diet and looking for a yummy salad that is high in vitamins and antioxidants while still adding a protein punch, you should definitely try this salad. Not only does it taste great, but you won’t feel guilty munching on the Alaska King Crab Pasta Salad for lunch or dinner!

Alaska King Crab Pasta Salad

INGREDIENTS
2 cups uncooked medium shell whole grain or wheat pasta
1 1/2 cups cooked Alaskan King Crab (you can substitute blue crab, dungeness, or imitation crab)
1 cup chopped cucumbers
1/4 cup diced red bell pepper
1/4 cup diced yellow bell pepper
1/2 cup quartered cherry tomatoes

DRESSING:
1/2 cup Light Miracle Whip Salad Dressing
1/4 cup Light creamy Italian salad dressing
1/4 cup grated Parmesan cheese

DIRECTIONS

Cook the whole grain pasta by the directions on the pasta box. Drain the pasta and then rinse it in cold water to keep it from becoming sticky. Place the pasta in a big salad bowl. Next, stir in the red and yellow peppers, cucumber, tomatoes, and crab meat.

Combine the Miracle Whip, Light Italian Dressing, and Parmesan Cheese. Pour the dressing over the salad and then toss the salad with the dressing. Place the salad in the refrigerator, covered, and chill from 2 to 4 hours before serving the salad.
